Icelandic Cuisine


One of the highlights of having a trip with a tour guide who is a Cordon Bleu trained chef, is some amazing meals. The meals show include a few in a restaurant, however most are done in one of the lodges we stayed at, and included some very impressive local preparations.

Embassy Chef's Challenge for IBD


The IBD Foundation of Ottawa ran its third annual Embassy Chef's Challenge, with the Chefs from 11 Embassies in Ottawa. The evening raised over $75,000 for the Foundation.

Meals in Iceland


During the tour with Portfolios In A Week with we got some interesting feedback from participants. One said, "this is not a photo tour, it is a food tour with photo options".

Axel Oskarsson our Icelandic guide is also a Cordon Bleu trained chef, so this is probably not a big surprise. On this tour, Axel was our cook for 4 of the evenings as we got to try local specialties. 

Iconnu Meals

One of the delights of staying at the Iconnu Lodge in the Yukon is the quality of the food. I was able to work with chef Jason to capture many of the meals that we enjoyed.
